Albumins are readily soluble in deionized water and can only precipitated by high concentrations of neutral salts. They help stabilize other solubilized proteins, are readily coagulated with heat, and as with other albumins, are acidic proteins which occur in abundance in body fluids and tissues and is easily crystallized.
